The Perfect, Grilled Steak
There is not much better in this world than sitting down to eat a perfectly grilled,
tender, and juicy Porterhouse or T-Bone steak. There are many opinions and
techniques available regarding the best way to master cooking a steak including
whether or not to marinade or use a rub, how long the steak should be grilled, and
how to correctly grill the steak. In my book there is only one way to grill a steak, and
you will find instructions below for grilling a Porterhouse steak, which will also work
for a T-Bone steak.
Choosing the Cut of Meat:
1. The first step is to choose a great cut of meat to grill. You will probably need a
good butcher’s help to do this. He or she can cut the steak for you. Choose a steak
that is at least 1-inch thick, up to 1.5 inches thick. The Porterhouse needs to be
fresh, not previously frozen, and it should be a nice, red color.
Marinade and Seasoning:
2. When you marinade a steak, you are not trying to change the flavor of the steak,
you are trying to compliment the delicious, natural flavors produced by grilling and
already present in the meat. You do not have to use a marinade, but a good
marinade will help in tenderizing the meat.
Steak Marinade:
1. 12-ounces of a dark beer such as Amber Bock
2. 3-Cloves of Garlic, Peeled and mashed
3. 1/4-Cup Chopped Onion
4. 1-TSP Fresh Ground Pepper
5. 1/4-TSP Salt
6. 1/4-Cup Vegetable Oil
7. 1/4-TSP Cumin
8. 1/4 TSP Dried Thyme
Instructions:
1. Whisk together all Ingredients
2. Place steak in a safe container, such as Tupperware, and pour marinade over the
steak
3. Turn the steak over, put a lid on the container, and refrigerate for 12 to 24 hours
Grilling the Steak
1. Remove the steak from the marinade, and let it sit for about 1 hour before you
grill it. This will bring the temperature of the meat closer to room temperature.
2. Before lighting the grill, spray on pam to prevent sticking.
3. Gas Grill Method: If you are using a gas grill, hopefully it has two burners. Heat
the grill by turning one of the burners on high, and the other on low. This will allow
you to sear the steak and seal in the juices. Place the steak on the hot side of the
grill for 1.5-2 minutes. Turn the steak over and cook for 2 minutes. Move the steak
to the cooler side of the grill and cook it for about 7-8 minutes for medium rare.
The internal temperature should reach about 135F degrees.
4. Charcoal Grill Method: Build a fire in 1/2 of the pit, and let the charcoal burn
down; they will turn white, and you should not be able to hold your hand over the
top of the grill for more than 1-2 seconds. Place the steak on the hot side of the
grill for 1.5-2 minutes. Turn the steak over and cook for 2 minutes. Move the steak
to the cooler side of the grill and cook it for about 7-8 minutes for medium rare.
The internal temperature should reach about 135F degrees.
5. Let the steak rest by placing it on a plate and covering it with foil for about 5
minutes or so. This will help in making the steak tender and juicy because if you cut
the steak too early, the juices will be hot, causing them to ooze out.
Steak Toppings:
1. Sauteed mushrooms and onions are two of my favorite steak toppings.
Directions:
1. Heat 4-TBSP of butter in a non-stick frying pan.
2. When the butter melts, add sliced onions and cook for 4 minutes
3. Add mushrooms and cook for another 4 minutes or until onions are opaque.
Options:
1.You can add 3-TBSP of heavy cream when you add the mushrooms to produce a
creamier topping
2. Add 1-2TBSP of Soy sauce or Worcestershire sauce to butter.

Are you worried about cooking for a vegetarian in your family this upcoming holiday season? Well, worry no more. This article will tell you exactly what you need to do and know before you start cooking this holiday season.
You can start off by finding out what type of vegetarian your guest is. For instance, if she is a strict vegan, then there’s a chance she will not eat food that contains honey or yeast; however, if on the other hand, she is a “semi” or “pseudo” vegetarian, there is a chance she will actually eat the meal as it is prepared, including the meat. And if she’s a lacto-ovo-vegetarian,she might eat anything with eggs and milk, but will probably avoid meat dishes.
If you talk to the vegetarian in your family before you prepare your holiday meal, you should consider asking the following five questions:
1. Do you eat certain types of meat or none at all?
If the vegetarian in your family will eat certain meats (generally fish, chicken, and turkey), then you should consider preparing that as a side dish or asking them if they would like to bring a small dish of it for their own meal.
2. Will you use serving utensils that have been placed in dishes containing meat?
Some vegetarians experience severe gastrointestinal stress when they consume meat and grease from meat, so it is a good idea to find out whether or not they can do so ahead of time. If they can’t, you can simply put out one utensil for all non-meat dishes and ask that guests do not cross-contaminate.
3. Do you eat foods that contain milk and eggs?
As I mentioned above, lacto-ovo vegetarians will eat milk and eggs, but other sub-categories of vegetarian will not. Some wont do it for health reasons; others wont for ethical reasons. Whatever the case, you can get around this problem by either creating more dishes that do not contain milk and eggs or by using egg replacer, which you can find at most supermarkets, and milk replacements, such as soya milk.
4. Do you eat honey and yeast?
Some vegetarians do not eat honey and yeast for ethical reasons. If you find out that the vegetarian in your family does not eat honey and yeast ahead of time, you can either prepare alternate dishes or ask if they are willing to bring an alternate dish.
5. Would you like to bring your own main dish (to replace the turkey, ham, etc.)?
Many vegetarians eat popular meat-replacement dishes, such as “tofurkey” and “veggie burgers.” Your guest will probably be more than willing to bring her own meat-replacement dish if you ask.
To reiterate, there are a number of things you should take into consideration when you cook for a vegetarian this holiday season; however, the single most important thing you can do is actually approach the vegetarian and ask how you can accommodate her and if she would like to cook with you or bring her own dish.
If you keep this in mind, your holiday meal will be a success with everyone – even the vegetarian in your family!

Comfrey plant has been recorded as a medicine since the ancient Greeks and Romans used an ointment from it to heal wounds and a medicine to cure ulcers. There are various ideas as to where the modem name originated, perhaps from the Latin confervere meaning to knit together. The botanical name for comfrey herb comes from the Greek sumphuo, to unite. There has never been any doubt about the healing powers.
The active principle in comfrey plant is allantoin which, according to the Extra Pharmacopoeia of Martindale is said to be a cell proliferate and healing agent stimulating healthy tissue formation; Comfrey herb has been used in the treatment of gastric ulcer, and it is an ingredient of some skin preparations.
Comfrey is a very good source of the antioxidant germanium, containing an impressive 150 parts per million. Comfrey plant is the second most common food source of germanium, the best source being garlic.
The Russian comfrey plant, which is used as a crop and as a fine source of compost as well as being nutritionally good, stands three feet high; the wild comfrey, Symphytum officinal, is lower, but can be used instead. There is a famous Bavarian recipe which uses the comfrey leaves on stalks, dipped in an egg and flour batter and deep fried; or the plant can be cooked like spinach.
As a juice comfrey plant is used for its valuable vitamin content and in cases of ulcers, fractures and wounds. Young roots may be added to leaves when juicing. Comfrey takes many years to grow from seed, but can be easily propagated from root cuttings.
